Sometimes, no matter what kind of eating plan or non-plan one is following, it's necessary to use up what's in the house. When one is restricted to the parameters of Kitchen Haiku, such an exercise is even more interesting.
Tonight, we had some chicken in the freezer, cherry tomatoes that needed to be used up, and the final portion of some cilantro that had found its way into at least 3 previous meals. Husband got inspired, and assembled the following:
Makes 2 servings
200 grams skinless boneless chicken breast, cooked and diced
2 cups cherry tomatoes, halved
1/4 cup chopped fresh cilantro
Juice of 1 lime
Dash of hot sauce
Salt and pepper to taste
Mix it all together, and serve.
